Our story

Primo is Italian for first.

So we start our bread at the beginning: flour, water, salt and a living sourdough starter, given the time it needs.

Primo is a small, chef-run bakery and baking school. Our experienced chef brings Western bakery habits to Chiang Mai: dough proofed in cane baskets, crusts scored by hand, butter pastry rolled and folded at the bench.

The same team bakes for the counter, teaches the classes and advises other food businesses. Every time, the job is the same: do the simple things properly.

From our ovens

Bread first. Then everything butter touches.

Round sourdough loaves cooling on a rack, the front one scored with a cross and studded with dried fruit

Signature

Sourdough

Naturally leavened country loaves, seeded loaves and darker whole-grain bakes. Each one is scored by hand, so no two crusts look quite the same.
